I love this recipe for one simple reason! IT’S SO VERSATILE! You can use it for almost anything! You can make everything from deep fried vegetables to deep fried skittles(I’ve tried… I don’t reccomend it). The recipe is also very simple. Here it goes,
3/4 cup flour
1/4 cup cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup water, Must be very very cold!
1 egg
Mix all the ingredients together and beat until smooth!
*You can add food colrong if you would like. A few drops should suffice.
** You can substitute the water for one 7 oz can of beer. Delicious with fish!
While most people were making jack’o lanterns, I turned my pumpkin into a few pies. It was amazingly simple to cut and cook the pumkin. I’ll tell you the simplest way to make a base for a pumpkin pie.
1. Cut the pumpkin in half, lengthwise.
2. Scrape out the insides, you want to get out the seeds and the stringy, dangly stuff that’s inside the pumpkin. I find that a heavy ice-cream scooper works best. Note, save the seeds. You can roast them for pumkin seeds. they are delicious
3. it is now time to cook the pumpkin. There are a few different ways to do this;
3.1, One is in the microwave. Place the pumpkin in a microwave safe bowl(you may have to cut it to get it to fit). Place a few inches of water in the bowl, cover. Microwave on high for 15-20 minutes or until the pumpkin is soft. Drain. Note, The pumpkin will be very hot.
3.2, You can also cook the pumpkin in the oven. Place in an oven-safe dish(with a top). Place the pumpkin in the dish and add about 3 cups of water, cover, and place in a 350 degree oven for 45 minutes to an hour.
4. Once the pumpkin is cooked, you need to seperate it from the rind. This should be fairly easy. I use a large tablespoon. But, you can use a knife if you would like.
5. Now you need to make a puree. I use a food processer. But, a hand blender or a regular blender work well also. Note, you may want to run the pumpkin goop through a sieve to be sure you don’t have any chunks.
And once you do that, you are done with the hard part. From here on out it gets really simple. You can use the pumpkin to make pumpkin pie(my fave) or whatever else you would like.
